200 g walnuts, shelled
2 tbsp flour
3½ tsp baking powder
4 eggs
150 g sugar
Mocha frosting
1 tsp instant coffee crystals, crushed
250 g cream
70 g icing sugar
50 g cocoa powder
Grease and flour two 8 inch round pans. Preheat oven to gas mark 4/180° C.
Sift together flour and baking powder.
Coarsely chop walnuts and mix with dry ingredients. Beat the eggs and sugar until thick and creamy. Fold in the walnut mixture. Spread evenly in 2 pans and bake for 20-25 minutes. Cool in pans for 10 minutes on wire racks. Then remove from pans and cool completely.
Frosting: Dissolve coffee crystals in a little cream then add remaining cream and beat till slightly thickened. Add sugar and cocoa and beat till soft peaks form.
Spread frosting on both layers of cake and sandwich together. Spread frosting on the sides as well. Chill thoroughly before serving,
