Salma’s classic sand cake

3 eggs

200 g castor sugar

½ tsp vanilla essence

grated rind of half a lemon

pinch of salt

125 g flour

1½ tsp baking powder

125 g cornflour

200 g butter, melted icing sugar for dusting

Grease and line a 8 x 4 x 2 inch loaf tin. Pre-heat the oven to gas mark 5/190° С. Beat the eggs, sugar, vanilla, lemon rind and salt in a double saucepan (or bowl over a pan of hot water) allowing the mixture to become luke warm. Remove from heat and beat until cool. Sift the flour, cornflour and baking powder thrice. Gently fold into egg mixture, mixing well. Add melted butter. Pour into prepared tin and bake for 40-45 minutes. Invert and cool on a wire rack and decorate with sifted icing sugar.
