75 g butter or margarine
350 g liquid apple sauce (see method)
700 g flour
1 tbsp soda bicarbonate, sifted
2 tbsp vanilla essence
2 tbsp cinnamon
1 tbsp nutmeg
250 g raisins
250 g walnuts
350 g sugar
Cream butter or margarine in a large bowl, add sugar and beat well. Add apple sauce, a little at a time, beating well till all apple sauce is consumed. This may curdle a little. Gradually add flour, nutmeg, cinnamon, soda and blend well. Add vanilla essence and the nuts and raisins that have been sprinkled with flour to prevent them from sinking to the bottom while baking. Use an 8 inch baking tin.
Bake in a pre-heated oven at gas mark 4/180° C for 45-60 minutes.
Apple Sauce
1 kg apples
25-50 g butter
Peel, core and slice apples and cook in a covered saucepan to a pulp. Beat with a wooden spoon and add the butter.
Chef’s tip: Serve as a dessert with whipped cream. This cake tastes better if made a day before serving.
