Stuffed chicken

1½ kg chicken, whole

2 medium onions, finely chopped

4-6 large green chillies, finely chopped

25 g coriander leaves, finely chopped

2 tomatoes, roughly chopped

1 tsp vinegar

2 eggs, hard-boiled

½ tsp cumin seeds

liver and gizzard of chicken, chopped

1 tbsp almonds, fried

1 tbsp raisins, fried

1 lime

225 g butter

1 tsp garlic paste

Soya sauce to taste

salt and pepper to taste

Prick the chicken with a fork and apply salt, pepper, juice of 1 lime and keep aside. Boil the liver and gizzard in a little water with garlic and vinegar till cooked.

Fry onions in a little butter till transparent. Remove from heat, add all other ingredients including the liver and gizzards except butter. Mix and bind well. Add a little soya sauce to taste, stuff chicken with this mixture and truss it.

Cook chicken in a pan in the remaining butter on low heat, sprinkling water when needed till it is tender. Serve with potato chips.
