Honey roast chicken

1-1½ kg whole chicken with skin

200 ml soy sauce

1 tsp ginger, finely sliced 1 tsp garlic, finely sliced 125 ml honey salt to taste

Preheat oven to gas mark 2/150° C. Rub chicken with salt and marinate in soya sauce

for 10-15 minutes. Drain chicken and put in baking pan with chopped ginger and garlic. Roast in oven, basting chicken every 15-20 minutes for 50-60 minutes. Take out from oven, pour honey over chicken, coating it on all sides and return to oven, basting every 15 minutes for another 30 minutes or till chicken is tender.

Remove chicken, strain sauce into a saucepan and cook until thickened for gravy. Serve with boiled rice.
