Dampukht

1 kg mutton, cut into 1-1½ inch pieces

350-400 g yogurt, whipped

2-3 medium onions, sliced

1 tsp ginger, ground

1 tsp garlic, ground

½ tsp turmeric

1 tsp saffron, roasted and crushed

100 ml butter or ghee

salt to taste

Mix all ingredients with meat except ghee and marinate for 3-4 hours. Heat oil in a saucepan, add the marinated mutton. Cook on a low heat till meat is tender and the oil separates from meat. Serve with man or chappati.
