1½ kg chicken, quartered
½ tsp ginger
½ tsp garlic
1 tsp chilli powder
½ tsp yellow food colouring
onion peel
1 tbsp oil or ghee
salt to taste
Boil the chicken quarters with ginger, garlic and salt until tender. Mix food colouring and chilli powder, apply to the chicken and marinate. Heat a piece of coal on the fire
until it is red hot, place the coal on onion peel in a pan containing the 4 pieces of chicken. Pour smoking hot oil/gbe on the hot coal and quickly close the lid of the pan. Put a weight on the pot lid to avoid smoke escaping and let stand for 5 minutes. Serve immediately.
